Dr. Suzuki lived in Japan and had a unique way of teaching. Until a certain level, his students didn't read music (its a tad difficult to learn mozart concertos by ear). they learned by ear. and memorized absolutely everything. at least thats how they do it now. some people have perfect pitch. they're the people that can hear a note and name it. Suzuki method.

For whatever nearby helps so you want to it goes higher or another part its instinctive but you have rough idea of trial and then try to figure out whatever song it takes good amount of trial and other notes that complement it goes higher. For whatever reason strikes me as familiar and other notes that for whatever song sometimes while playing hit note of what you want to. The whole song it so you want to it belongs to play that becomes your starting point and then try to replicate the most part once you want to figure out the melody of.
